Lemon Custard Cake Recipe

As the weather start to get warmer there one thing I craved and that is anything lemon. I recently have a brunch of lemon from my trip to the farmer market (p.s I will be making a post on it) and decide if life gives you lemon it’s best to make lemon cake. I enjoy something sweet when having my coffee. Like all my recipe this one is super easy and of course aesthetically pleasing. • 3 cups all-purpose flour

• 1/4 tsp baking soda

• 2 3/4 tsp baking powder

• 1 tsp salt

• 1/2 cups melted butter

• 2 cups sugar

• 4 egg whites

• 1 1/2 tsp vanilla extract

• 1 1/4 cups milk

• 1/4 cup lemon juice

• 2 tbsp lemon zest

• 1 cup powder sugar

• 3 slice of lemon

Vanilla Pudding

1 box vanilla pudding

2 cup whole milk


Vanilla Pudding

• Add the vanilla pudding box and milk together and combine until it forms a custard


•Preheat the oven to 350°F

•Line cake pans with parchment paper in the bottom and grease the sides.

•Combine the flour, baking soda, baking powder and salt in a medium sized bowl. Set aside.

•Add butter and sugar in a large mixer bowl set aside

•Add the egg whites and vanilla extract and mix until well combined. And then add butter and sugar on medium speed for about 2-3 minutes, until light and fluffy.

•Add about one-third of the flour mixture to the batter and beat on medium speed until incorporated.

•Add about half of the milk and the lemon juice and zest and beat on medium speed until is combined.

•Alternates adding dry and wet ingredients, scraping down the sides of the bowl.

•Bake the cakes for 25-30 minutes, or until a toothpick inserted into the middle of the cakes comes out clean.

•Remove the cakes from the oven and allow to cool for 45 minutes

•Cut cake in half and add vanilla pudding.

•Dust with powered sugar and add three pieces of lemon for garnish.
